Simple Sweet White Corn Soup

This velvety sweet soup will sweep you off your feet!  The corn and onion sauté adds just the right contrast in texture to this smooth and luscious soup. The best part (other than eating it of course) is that it is super simple to make.   




Corn Soup:

2 (15.25 oz.) cans white corn, drained or 3 cups fresh white corn kernels cut off the cob*reserve ½ cup corn for corn & onion sauté below*

1 1/3 cup yellow onion, roughly chopped *finely dice the 1/3 cup of onions for sauté below*

2 garlic cloves, roughly chopped

½ cup coconut milk creamer, original (I use the brand SO Delicious)

2 cups vegetable stock

¼ tsp. white ground pepper

½ tsp. course sea salt

2-3 tbs. chives, thinly sliced

1 tbs. extra virgin olive oil

Corn and Onion Saute:

2 tsp. extra virgin olive oil

1/2 cup corn, drained

1/3 cup onion, finely diced




 Corn and Onion Saute:

In a medium pan heat 2 tsp. olive oil over medium-high heat, add ½ cup corn and 1/3 cup onion stirring often until edges of corn are browned and onions are a golden brown. Place corn in a small bowl and set aside.

Corn soup:

In a large pan heat olive oil over medium heat, add onions and garlic stirring around pan until onions turn transparent then add the corn. Turn up heat to medium-high stirring often until some of the corn and onions’ edges are lightly browned. Add the coconut creamer and vegetable stock, white pepper, and sea salt and stir to combine. Lower heat to a simmer for about 3 minutes.  Carefully pour corn mixture into a high powered blender (Vita-Mix blender works best) or food processor and blend until smooth (make sure to place a towel over the lid of the blender while blending, hot liquid will cause pressure in blender and can cause lid to lift and splatter hot liquid!). Once blended pour soup into bowls and top each with approximately 1 heaping tbs. of the corn and onion sauté and sprinkle with chives. 


Makes: 4 servings


Adriana’s Tip: This soup makes a great appetizer when entertaining.  Pour this soup in tall shot glasses topped with the corn and onion sauté and chives. This is a fun presentation that will be sure to impress your guests!
